dinner for one


I'm staying at my parents' house this week babysitting my sister. I think I've mentioned in past posts that my sister is not a baby. She's almost 19. Either way, I enjoy it because we get to spend lots of time together hanging out, talking, cooking, eating and going on walks.

We made homemade pizzas on Monday night, and then I was informed that she was 'busy' on Tuesday and Thursday. Guess that's what happens when baby sister has a boyfriend! So despite being with her, I ended up cooking for one on Tuesday night.


We had some leftover asparagus from dinner on Sunday and marinara from our pizzas the night before. I wasn't in the mood to do anything complicated because the heat has turned me into a slug. Fortunately, boiling pasta and asparagus and heating up sauce is super simple. And super tasty! We have two huge basil plants in our backyard that I was planning on using as a garnish, but I totally forgot! Not that it really needs it, but I'm a sucker for fresh herbs.

Another great thing about this dish is that I only dirtied one pot! Talk about ultimate, delicious, laziness.


Whole Wheat Vegetarian Pasta, serves 1
  • 6 asparagus, ends removed, cut into 1" pieces
  • whole wheat thin spaghetti, enough for one person
  • 3 bocconcini mozzarella balls, quartered
  • 1/3-1/2 cup marinara
  • 1 Tbsp grated parmesan
Cook pasta according to directions, during the last minute of cooking, add the asparagus. Drain them after a minute. In the same pan (who needs more dishes??), heat up the tomato sauce and mozzarella. Add the pasta and asparagus and toss to coat. Plate and top with grated parmesan. Simple, light & fresh!

That looks delicious! Even though I'm usually cooking for a whole family sometimes I just need something simple for myself and this looks perfect. I love the mozzarella balls!
