Looks simple, right? Well it is. There's no measuring, emulsifying or chopping required and it's still totally satisfying.
Chewy prosciutto, crunchy pine nuts, peppery arugula, salty parmesan and tangy balsamic vinegar. Talk about an incredible combination of flavors and textures. Sometimes I add scallions, but that requires light chopping and earlier I said no chopping, so consider those an optional ingredient!
There's no real recipe, but these are the ingredients and guesstimates of the amounts. Enjoy!
No Recipe Arugula Salad, serves one
- 2 big handfuls of argula
- 1 Tbsp pine nuts
- 1 tsp grated fresh Parmigiano-Reggiano
- 1 1/2 slices prosciutto, torn into bite-size pieces
- S & P to taste
- 1- 1.5 tsp olive oil
- 1 - 1.5 tsp balsamic vinegar
Cool fact: Vinegar will wilt your greens so don't add it until right before serving. Olive oil on the other hand can be added a little earlier.
