You know what I'm talking about. The classic Caesar salad. It's soooo delicious, but it's also a caloric nightmare. Not to mention all that fat. Once you realize how bad it is for you, you start craving, thinking, even dreaming about it! How typical. Why can't we crave, think and dream about carrot sticks??
BUT! There's no need to fret over your guilty pleasure anymore. Call it an answered prayer, a miracle or just plain ingenuity, but it's arrived. A Caesar salad, low in fat and calories that still has that creamy texture & the delicious bite from the Parmesan and anchovies. This dish looks and tastes like the real thing. See for yourself!

Caesar dressing
- 2 cloves garlic, minced and mashed into a paste
- 1 tsp anchovy paste
- 1 tbsp Dijon mustard
- 1/2 cup nonfat Greek yogurt, Fage
- 2 tbsp lemon juice
- 1 tsp Worcestershire
- 1/4 c. freshly grated parmesan
- S&P to taste
Salad
- romaine lettuce
- fresh parmesan
- croutons, easy on these, a lot of fat comes from here! or try toasting your own
- optional: grilled chicken
