salad season: insalata caprese edition



With the continued heat wave, warm and hearty foods still sound awful. I'm already sweating from the 100+ degree temperatures — the last thing I want is a sweat-inducing meal. So here it is, yet another edition of salad season!

If you love tomatoes, basil and fresh mozzarella you've probably already had a caprese salad. I love this salad, not only because of the bright colors and flavors that make it so delicious, but it's just so pretty! Especially when tomatoes are so ripe. I particularly love heirloom tomatoes because of their great taste, interesting shape and crazy colors. To give this salad a little more body without loading up on too much cheese, I added a generous handful of baby arugula right on top. With a sprinkle of kosher salt, fresh ground pepper and a splash of olive oil and good balsamic vinegar you've got a perfectly elegant and delicious salad.

Try serving as a side salad with dinner or just eat it as a light lunch! Either way, it's sure to remind you that sweltering temperatures do have an upside.
