42 degrees, rainy and overcast. What am I talking about? This strangely long winter we're having in Texas. A year ago it was sunny and 82 degrees. I could be sitting at the pool, but instead I'm inside hiding under my blanket watching reruns of Tyler's Ultimate. This weather is definitely proof that you don’t get everything you want, BUT it does give me an excuse to cook another hearty wintery meal!
I’ve never made chili, but I’ve wanted to for a long time. Finally tried it with one of Cooking Light’s recipes,Smoky Slow Cooker Chili. It’s untraditional, but delicious and so easy to make. It does call for a bunch of ingredients, but once you put it all in the slow cooker, your job is over. Best of all, it’s better for you than the traditional beef chili and in my opinion, tastes better! Serve it with cornbread muffins (Jiffy makes a great mix!)
It might be cold, but at least we're still eating good!
