We were in Arizona a few weeks ago for the Fiesta Bowl. Unfortunately our Frogs didn't come out victorious, but either way the trip was still a blast. Any excuse to see college friends is fine with me. Plus, I can't remember the last time I went hiking and sat by the pool in January.
Our second to last night we went to dinner at Roaring Fork. Seeing as none of us had been there, we didn't know what to expect, but we weren't disappointed. The restaurant is known for their green chile pork stew, so naturally we HAD to try it. They serve it in this miniature pot with flour tortillas. It had great flavor, lots of chiles, and the perfect amount of spice. Oh! And the melted pepper jack cheese on top was a nice touch. We ran out of tortillas too fast, but forks sufficed. Just wish I could find that recipe... We also ordered the green chile mac n' cheese (which I DID find the recipe for!) It was spicy, cheesy and even a little crunchy with the bread crumbs on top. Definitely different than your average mac n' cheese, but delicious! I can't wait to make it!
I don't actually remember what I had for dinner - maybe chicken. And that's not because it wasn't good. Either I was still hung up on the green chile-laden appetizers or I was distracted by the awkward blind date happening directly behind me. Be looking for green chile stew soon, it's on my list!
