salad season: balsamic glaze edition
The warm weather and thought of putting on a swimsuit in mere months always sparks a change in what I make for dinner. There’s something so appetizing about a salad when the weather is warm. Cool, crisp, light… far different from what I crave in the winter.
One salad that never gets old is arugula. If you’ve never had arugula you’re missing out on one of nature’s most delicious gifts. You may be thinking “Lettuce?!, Seriously?” Yes, I am VERY serious. It has an awesome peppery flavor and is so good you could eat it plain. It’s so good that you don’t want to ruin it with a heavy dressing. Here’s some other options: champagne vinaigrette, lemon juice, or my all time favorite- balsamic glaze.
Not only does balsamic glaze sound cool, but it looks beautiful on a salad and tastes delicious. Want to know the best part about it? It’s so easy to make. Simply pour 1 cup of balsamic vinegar into a small saucepan and simmer on low heat until it has reduced by two thirds. You’ll be left with a 1/3 cup of balsamic glaze that resembles syrup. It’ll tale about an hour to an hour and half, but it lasts forever and you only need a little drizzle to get a ton of flavor. Sprinkle your arugula with sea salt, fresh cracked pepper and a light drizzle of olive oil and the balsamic glaze. MMMMM… this only helps perfect nature’s gift.
In this picture I used the above ingredients and added avocado, sliced shallots, bocconcini mozzarella and shaved parmesan. Pine nuts would have been a nice addition too, but I didn’t have any of those!
